GlenAllachie recently added a sherry cask finished GlenAllachie 15 Years to its core range. One of the first projects Billy Walker started working on when he acquired the distillery in 2017.
It has been matured in ex-bourbon and finished in Oloroso and Pedro Ximénez sherry casks, both puncheons and hogsheads.

GlenAllachie 15 yo (46%, OB 2019, Oloroso + PX sherry )Nose: fairly rich, with sweet fruits (blackcurrant jam, rhubarb, orange liqueur, bananas) and cinnamon pastry. Feels a little ‘pressure-cooked’. A lot of milky chocolate and a little marzipan. Leathery notes.
Mouth: creamy fruits (soaked raisins, fig syrup, red gummi bears),mixed with Christmas cake, butterscotch and nutty notes, mainly walnuts. Some oaky touches: white pepper and a light charred bitter edge. Tobacco.
Finish: medium, on raisins and oak spice.
Not bad, but it pulls a well-known trick, simply because you need this kind of whisky in a modern-day line-up (or so they say). There’s a slightly synthetic, syrupy coating, not entirely integrated. Available from The Whisky Exchange or Master of Malt for instance.
